- Granulated Sugar: I always like to cut back on the sugar a tad bit when I’m making sweets for my family. If you prefer your cookies on the sweeter side, add an additional 1/4 cup of sugar.
- All-Purpose Flour: Make sure to sift the dry ingredients together before adding it to the creamed butter.

- Add the sprinkles to the cookie dough. Then gently and quickly combine with the mixer.
- Scoop the cookies onto a baking sheet and bake for approximately 10-11 minutes. The cookies are done when you see the outer edges turn a light golden brown.

- Use Quality Butter: For any cookie recipe, it’s so important to use high quality butter. My favorite brand is Kerrygold Unsalted Butter.
- Underbake the Cookies: Don’t step away from the oven! I like to check in on my cookies at the 9-minute mark to see if the edges have started to brown. When you start to see the edges start to turn a light golden brown, take them out of the oven immediately! This will ensure that your cookies stay soft and chewy.
- Don’t Overmix the Batter: With most cookie recipes, you don’t want to overmix the batter because it can lead to a tough cookie. It’s also important to not overmix the sprinkles into the batter because it will break the sprinkles.
Easy 20-Minute Funfetti Cookies
Ingredients
- 1/2 cup unsalted butter 1 stick
- 1 large egg
- 3/4 cup granulated sugar For a sweeter cookie, you can add an additional +1/4 cup
- 1 tbsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup rainbow sprinkles
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F.
- Cream the butter and sugar together until light and fluffy with a stand or hand mixer. Make sure to scrape down the sides of the bowl to ensure the butter and sugar are all mixed well together.
- Then add the egg and the vanilla extract to the creamed butter. Beat until light and fluffy.
- In a bowl, combine the flour, baking powder, baking soda and salt. Then sift the dry ingredients into the creamed butter. Then beat until the flour is combined into the wet mixture and no dry streaks of flour remain. NOTE: Do not overmix!
- Then add the sprinkles to the cookie dough. Quickly beat the sprinkles into the dough. NOTE: Do not overmix or the sprinkles will break.
- Scoop the cookie dough onto a lined cookie sheet about 2 inches apart. I used a 1.5 oz scooper which is equivalent to 3 tbsp. Bake for approximately 10-11 minutes or until the outer edges of the cookies turn a light golden brown. NOTE: It's better to underbake these cookies! I like to check on them at the 8-9 minutes mark so keep a close eye on the cookies in the oven. Then cool the cookies for 10 minutes. Enjoy!
