Mayak Gyeran means “Drug Eggs” in Korean because they are so addicting! The eggs are marinated in a sweet and savory sauce that will make your rice disappear quickly. It only takes 20 minutes to prepare and it can be stored in the fridge for up to 5 days. I make a batch on weekends and it’s my go-to breakfast or lunch during those busy weekdays.

What type of sweeteners can I use?
Depending on your sweetener preference, you can use any of the following options:
- Korean Corn Syrup – I like to combine Korean corn syrup and honey in my marinade.
- Granulated Sugar
- Honey

How long can I store the eggs in the fridge?
You can store in the refrigerator for up to 5 days in an airtight glass container.

What can I do with the remaining sauce?
Once you finished all the eggs, you can use the remaining sauce as a dipping sauce for dumplings or boil another batch of eggs to marinate in the sauce. The marinade can be stored in the refrigerator for up to two weeks.

Mayak Eggs (Korean Marinated Eggs)
Ingredients
- 6 eggs
- 2 tbsp white vinegar for boiling the eggs
- 1/2 cup soy sauce
- 1/2 cup water
- 1/2 cup corn syrup, honey or granulated sugar
- 4 garlic cloves chopped
- 1/3 cup yellow onions chopped
- 4 scallions chopped
- 1 jalapeno (optional) chopped
- 1 red chili (optional) chopped
- 1-2 Thai chilis (optional) add only if you like extra heat!
- 1 tbsp toasted sesame seeds
- sesame oil for garnish
Instructions
Boil the Eggs
- Add enough water to a pot to cover all the eggs. Bring the pot of water to a boil. Add the vinegar to the boiling water and then gently drop in the eggs. (The vinegar will make it easier to peel the eggs.) Boil the eggs for 6 minutes for soft boiled eggs.
- After 6 minutes, remove the eggs from the pot and transfer them to an ice bath. Let the eggs cool completely for about 5 minutes in the ice bath.
Make the Marinade
- While the eggs are cooling, make the marinade. In an airtight glass container, combine the garlic, scallions, onions, peppers, soy sauce, honey / corn syrup / sugar, water and sesame seeds. Stir all the ingredients together with a spoon.
- The gently crack and peel all the eggs. Then drop the peeled eggs into the marinade. Place the lid on the container and let the eggs marinade for at least 6 hours in the fridge. Overnight is best!
- Serve with a bowl of warm rice and a drizzle of sesame oil and the marinade sauce. Enjoy!
