My favorite season is grilling season and this is summer on a skewer for me. They are the perfect compliment to any dish – rice bowls, summer rolls, salads. I love grilling fruit during the summer months and grilled pineapples always takes me back to Hawaii. The shrimp marinate is so simple – kosher salt, white pepper, olive oil, lime juice and zest. Yet, these skewers are packed with so much sweet and savory flavors.

Grilled Shrimp & Pineapple Skewers
Ingredients
- 24 wild caught jumbo shrimp peeled and deveined
- 1/2 tsp kosher salt
- 1/4 tsp white pepper
- 1 tsp grated ginger
- zest and juice of 1 lime
- 3 tbsp olive oil
- 24 fresh pineapples cut into 1" pieces
- 12 bamboo skewers
Instructions
- Soak the bamboo skewers in water for 10 minutes.
- In a large bowl, whisk together the oil, lime juice and zest, salt, white pepper and ginger. Add the shrimp to the bowl and toss gently in the marinade. Marinate the shrimp for 15 minutes.
- Then skewer 3 shrimp and 3 pineapples on each stick.
- Gently brush the grill with oil and then set the grill to medium high heat. Cook the shrimp for 2-3 minutes on each side.
- Add additional grated lime zest and spritz of lime juice on the skewers. Serve warm along with your favorite dish.
