Growing up, one of my favorite things to eat at McDonald’s was their apple pie. Of course, nothing beats a traditional warm apple pie with a buttery pie crust. However, when I’m nostalgic for McDonald’s apple pie, I make this easy and simple puff pastry version at home. It’s filled with soft jammy granny smith apples that are sweetened with just brown sugar and cinnamon. They’re so easy to make and the coziest pastry to serve at brunch. Enjoy!

- Granny Smith Apples – I prefer to use Granny Smith apples because they’re more tart which balances well with the brown sugar. Substitute Options: Pink Lady, Braeburn, Golden Delicious, Honeycrisp or Jonagold apples
- Puff Pastry – You can find puff pastry at the freezer aisle at most grocery stores. I like to use Pepperidge Farm or Dufour Puff Pastry.
- Brown Sugar
- Granulated Sugar
- Cinnamon
- Butter
- Egg Wash
- Corn Starch Slurry

- Cook the Apples: Cook the diced apples, brown sugar and cinnamon with some butter in a large skillet. Then add the corn starch slurry to the pan and stir the apples. Cover the pan with a lid and decrease the heat to low. Let the apples stew for about 4-5 minutes until you reach a jammy consistency. Transfer the apples to a bowl and let them cool for about 10 minutes.
- Prep the Puff Pastry: Lightly flour your work surface and gently stretch puff pastry with a rolling pin. Cut the pastry into 6-8 rectangle pieces (approximately 2-2.5 inches in width). Sometimes I like to make mine bigger so I’ll end up with 6 pieces that are about 3-3.5 inches wide.
- Assemble the Apple Pie: Add the apple filling onto 4 rectangle pieces. Be generous with the filling! Then brush the edges of each rectangular piece with egg wash. The place another puff pastry piece over the piece with the filling. Gently press and seal the edges. Brush the top of the pastry with egg wash and sprinkle sugar. Score the tops with a knife to allow the steam from the apples to escape while baking.
- Bake the Apple Pie: Place the pastries on a baking sheet with lined parchment paper. Bake in the oven at 400°F for 20 minutes until golden brown. That’s it!
Easy Puff Pastry Apple Pie
Equipment
- 1 large skillet with lid
Ingredients
- 1 puff pastry sheet thawed according to package instructions
- 3 granny smith apples peeled and diced
- 3 tbsp brown sugar
- 2 tbsp unsalted butter
- 1/2 tsp cornstarch for cornstarch slurry: mix cornstarch with 1 tbsp of water
- 1/2 tsp cinnamon
- 1 egg beaten for egg wash
- 1 tbsp granulated sugar
Instructions
- Preheat oven to 400°F.
APPLE FILLING
- Preheat a large skillet over medium heat. Then melt the butter in the pan. Add the diced apples, brown sugar and cinnamon to the pan. Stir all the ingredients together and let the apples simmer in the pan for about 2 minutes.
- Then add the cornstarch slurry to the skillet and mix with the apples. Cover the pan with a lid and decrease the heat to low. Let the apples stew for about 4-5 minutes until you get a jammy consistency. Transfer the apples to a bowl and let them cool for about 10 minutes.
PREP THE PUFF PASTRY
- Once the puff pastry sheet is thawed, lightly flour work surface. Transfer the puff pastry sheet to the work surface and gently stretch with a rolling pin.
- Then cut the puff pastry into 8 equal rectangular pieces, approximately 2-2.5 inches in width. Place 4 rectangle pieces onto a baking sheet lined with parchment paper.
ASSEMBLE THE APPLE PIE
- Add the apple filling onto the 4 puff pastry pieces on the baking sheet. Be generous with the filling!
- Brush the edges of each rectangular piece with egg wash. Then place another puff pastry piece over the piece with the apple filling. Gently press and sea the edges with a fork. Trim the edges with a knife for neater edges.
- Brush the tops of each pastry with egg wash and sprinkle the tops with granulated sugar. Score the topes with a knife.
- Place the baking sheet in the oven and bake the apple pie for about 20 minutes until golden brown. Let them cool for about 5 minutes before serving. Enjoy!
