Sweet peaches marinated in hot honey, prosciutto, creamy brie and buttery puff pastry all come together in this simple summer pastry. These pastries are great for appetizers, brunches or even a light dinner making them perfect for entertaining. The best part is these only take 30 minutes to make!
key ingredients for peach brie prosciutto puff pastry
- Puff Pastry Sheets: You can find these in the frozen aisle at most supermarkets. I usually use puff pastry sheets from Pepperidge Farm or Dufour.
- Ripe Yellow Peaches
- Prosciutto
- Brie: If you can’t find brie, Camembert is a great substitute.
- Hot Honey (optional): I love pairing something sweet and salty with something spicy. However, this is optional if you plan on serving these pastries to children or if you’re not a fan of spice. You can always drizzle a bit of hot honey on top of the pastries at the end which is what I did for my family since I have children.

key steps to making peach brie prosciutto puff pastry
First, marinate the sliced peaches with olive oil, fresh thyme, salt and hot honey. Gently roll out my pastry sheet to smooth out the folds prior to cutting them into squares. Then cut the puff pastry sheet into 4 equal squares.
Then layer one prosciutto slice onto each square.
Then add the brie on top of the prosciutto.
Finally, add the marinated peach slices and add some fresh cracked black pepper.
Then fold over one edge and brush the top of the corner with some egg wash (refer to video for example). Then fold over the opposite corner. Then brush the tops of the pastry with egg wash.
Bake at 400F for 15-20 minutes until the pastries becomes golden brown. Let them cool for about 5 minutes before serving. Enjoy!
Easy Peach Brie Prosciutto Puff Pastry
Ingredients
- 1 puff pastry sheet thawed according to package instructions
- 1 ripe yellow peach cut into 1/4 inch thin slices
- 4 prosciutto slices
- 4 oz brie cut into 1/4 inch thin slices
- fresh thyme
- 2 tbsp hot honey optional
- 1 tbsp extra virgin olive oil
- flaky salt + cracked black pepper
- 1 egg beaten
Instructions
- Preheat oven to 400F.
Marinate the Peaches
- In a bowl, combine the peaches, olive oil, hot honey (optional) and fresh thyme. Then season with salt and black pepper. Set aside and let the peaches marinate for about 5 minutes.
Prep the Puff Pastry
- On a floured surface, gently roll out the puff pastry sheet. Cut the pastry sheet into four equal squares. Then transfer the squares to a baking sheet lined with parchment paper.
Assemble the Pastry
- On each square pastry, add a slice of prosciutto, brie and then add the peaches on top. Crack some black pepper on top of the peaches.
- Then fold over one corner to the middle and then brush the top of that corner with some egg wash. Then fold the opposite corner to meet the other corner. Press gently so that both corners are sealed together. Reference video for example.
- Then brush the tops of the puff pastry with egg wash.
Bake the Pastry
- Bake the pastry for about 15-20 minutes until they become golden brown.
- Let the pastries cool for about 5-10 minutes. Then garnish the tops of the pastry with a drizzle of hot honey and/or fresh thyme.
