Ingredients

  • 1 puff pastry sheet thawed according to package instructions
  • 1 ripe yellow peach cut into 1/4 inch thin slices
  • 4 prosciutto slices
  • 4 oz brie cut into 1/4 inch thin slices
  • fresh thyme
  • 2 tbsp hot honey optional
  • 1 tbsp extra virgin olive oil
  • flaky salt + cracked black pepper
  • 1 egg beaten

Instructions

  • Preheat oven to 400F.

Marinate the Peaches

  • In a bowl, combine the peaches, olive oil, hot honey (optional) and fresh thyme. Then season with salt and black pepper. Set aside and let the peaches marinate for about 5 minutes.

Prep the Puff Pastry

  • On a floured surface, gently roll out the puff pastry sheet. Cut the pastry sheet into four equal squares. Then transfer the squares to a baking sheet lined with parchment paper.

Assemble the Pastry

  • On each square pastry, add a slice of prosciutto, brie and then add the peaches on top. Crack some black pepper on top of the peaches.
  • Then fold over one corner to the middle and then brush the top of that corner with some egg wash. Then fold the opposite corner to meet the other corner. Press gently so that both corners are sealed together. Reference video for example.
  • Then brush the tops of the puff pastry with egg wash.

Bake the Pastry

  • Bake the pastry for about 15-20 minutes until they become golden brown.
  • Let the pastries cool for about 5-10 minutes. Then garnish the tops of the pastry with a drizzle of hot honey and/or fresh thyme.
