Pat both sides of the salmon with a paper towel. Then season with salt and black pepper and set aside.
In a bowl, whisk together the Thai sweet chili sauce, soy sauce, ginger, garlic and water.
Heat a pan over medium-high heat and add the oil to the pan. Once the oil is heated, transfer the salmon to the pan skin-side down first. Sear both sides for about 2-3 minutes until cooked to desired temperature. During the last minute of cooking, pour the sweet chili sauce over the salmon and add the scallions. Then lower the heat. Let the salmon simmer in the sauce for about 1-2 minutes until the sauce thickens.
Garnish with more scallions and serve the salmon over a bowl of rice with a side of veggies. Enjoy!
