Easy Greek Salad (Horiatiki)

Ingredients

  • 1/4 medium red onion thinly sliced into half moons
  • 4 ripe Roma or vine tomatoes cut into wedges
  • 1/2 English cucumber or 2-3 Persian cucumbers; cut into half moon 1/2" thick
  • 1/2 green bell pepper cut into half moon 1/2" thick
  • 1/2 cup Greek pitted Kalamata olives
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 4 oz creamy Greek feta cheese block cut into triangles
  • 1 tsp dried oregano
  • kosher salt + cracked black pepper

Instructions

  • Add all the vegetables into a large salad bowl.
  • Pour the olive oil and red wine vinegar over the salad. Then season with oregano, salt and pepper. Toss all the ingredients together.
  • Top the salad with feta. Drizzle more olive oil on top of the feta and sprinkle additional oregano to the feta.
  • Serve with your favorite bread or protein. Enjoy!
